Paleo Banana Bread (Healthy + Easy)

Is there anything more satisfying than the smell of fresh banana bread baking? (Aside from the taste of course!) 

Banana bread is such a nostalgic treat – it’s a classic that brings us back to our childhood days in grandma's kitchen. Besides being a good way to use up leftover bananas, banana bread is a delicious treat to have on hand for breakfast with a cup of coffee, or for an afternoon snack when the kiddos come home from school. 

Bananas are rich in fiber, antioxidants, and several nutrients, so they are a great staple snack. This banana bread is not only packed with potassium but it’s gut friendly too! I always toss in a few capsules of my favorite gut support: Just Thrive Probiotic!

This Paleo Banana Bread is simple and so satisfying with just the right amount of sweetness.  It's  important to use very ripe bananas. You want a little spotting on the peel, then the bananas will be nice and sweet. This really enhances the flavor and sweetness of the banana bread—and makes it taste more like traditional banana bread. 

And because the ripe bananas provide sweetness, you don't need to add a bunch of sugar. All it needs is a little bit of honey!  I hope you enjoy it as much as I do! Try this recipe out in your home and let me know what you think! 🍌🍞

And now, onto the recipe! 

Paleo Banana Bread (Healthy + Easy)

Ingredients:

  • 3 extra large mashed ripe bananas
  • 3 eggs (pasture raised if possible)
  • 1/4 cup pure honey (or pure maple syrup)
  • 3 tablespoons of avocado oil (or melted unsalted butter)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 2 1/2 cups of blanched almond flour 
  • 2-4 capsules of Just Thrive Probiotic
  • Optional: 1/3 cup semi sweet chocolate chips (for chocolate banana bread) 

Instructions:

  1. Preheat the oven to 350 degrees F. 
  2. Line a 9x5- inch loaf pan with parchment paper and coat the pan with nonstick spray. 
  3. In a large mixing bowl, mash the bananas by hand or with a hand mixer until smooth. Once mashed, whisk in the eggs, honey (or maple syrup,) oil, vanilla, baking powder, baking soda, cinnamon and salt. Mix until well combined. 
  4. Next, add in the almond flour to the wet ingredients. Fold the batter until the almond flour is fully mixed in. 
  5. Pour the batter into the pan and smooth the top until the batter is equally spread out. Bake for 20 minutes, then loosely cover the pan with foil. Bake for 5-10 more minutes, or until a toothpick can be inserted and come out clean. 
  6. Once the loaf is finished baking, pull the pan out and let it cool for 10 minutes. Gently lift the loaf out of the pan with the parchment paper and let it finish cooling before slicing. 
  7. Enjoy as is, or top it with melted butter or nut butter! 

Modifications:

If you do not have parchment paper, grease the pan with oil before baking or use foil.
